A simple and delicious recipe for creamy garlic shrimp pasta that is perfect for a quick dinner.
Ingredients
- 8 ounces fettuccine pasta
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the shrimp to the skillet and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and the sauce is smooth. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
- Add the cooked fettuccine and shrimp back into the skillet. Toss everything together until the pasta is well coated in the creamy sauce.
- Serve immediately, garnished with fresh parsley.
Notes
- For a spicy kick, add a pinch of red pepper flakes when sautéing the garlic.
- You can substitute the shrimp with chicken or vegetables like spinach and bell peppers for a different flavor profile.
