Description
A refreshing and creamy cucumber salad made with Greek yogurt, perfect for a light meal or side dish.
Ingredients
- 2 cups diced cucumbers (about 2 medium cucumbers)
- 1 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 clove garlic, minced
- 1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
- Salt and pepper to taste
- 1/4 cup red onion, finely chopped (optional)
- 1/4 cup cherry tomatoes, halved (optional)
Instructions
- In a large bowl, combine the diced cucumbers and salt. Let them sit for about 10 minutes to draw out excess moisture, then drain any liquid.
- In a separate bowl, mix the Greek yogurt, olive oil, lemon juice, minced garlic, dill, salt, and pepper until well combined.
- Add the drained cucumbers to the yogurt mixture and stir gently to coat.
- If using, fold in the red onion and cherry tomatoes for added flavor and color.
- Taste and adjust seasoning if necessary. Chill in the refrigerator for at least 30 minutes before serving to enhance the flavors.
Notes
- For a bit of crunch, add a handful of chopped bell peppers or radishes.
- Substitute the Greek yogurt with sour cream for a different flavor profile.
