  • 2 cups diced cucumbers (about 2 medium cucumbers)
  • 1 cup plain Greek yogurt

  • 1 clove garlic, minced
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
  • Salt and pepper to taste
  • 1/4 cup red onion, finely chopped (optional)
  • 1/4 cup cherry tomatoes, halved (optional)

Instructions

  1. In a large bowl, combine the diced cucumbers and salt. Let them sit for about 10 minutes to draw out excess moisture, then drain any liquid.
  2. In a separate bowl, mix the Greek yogurt, olive oil, lemon juice, minced garlic, dill, salt, and pepper until well combined.
  3. Add the drained cucumbers to the yogurt mixture and stir gently to coat.
  4. If using, fold in the red onion and cherry tomatoes for added flavor and color.
