Ingredients
- 1 cup small tapioca pearls
- 2 cups water
- 1 ripe mango, peeled and diced
- 1 cup coconut milk
- 1/2 cup sweetened condensed milk
- 1/4 teaspoon salt
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium saucepan, bring 2 cups of water to a boil. Add the tapioca pearls and stir gently. Reduce the heat to medium and cook for about 15 minutes, stirring occasionally, until the pearls become translucent.
- Remove the saucepan from heat and let the tapioca sit for an additional 10 minutes. Drain the pearls in a fine mesh strainer and rinse them under cold water to stop the cooking process.
- In a large bowl, combine the cooked tapioca pearls, diced mango, coconut milk, sweetened condensed milk, and salt. Stir gently until well mixed.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the mixture to chill.
- Serve in individual bowls or cups, garnished with fresh mint leaves if desired.
Notes
- For a tropical twist, add diced pineapple or kiwi along with the mango.
- Substitute almond milk for coconut milk for a lighter version or to accommodate dairy-free diets.
