Description

Ingredients

  • 1 cup small tapioca pearls
  • 2 cups water
  • 1 ripe mango, peeled and diced
  • 1 cup coconut milk
  • 1/2 cup sweetened condensed milk
  • 1/4 teaspoon salt
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium saucepan, bring 2 cups of water to a boil. Add the tapioca pearls and stir gently. Reduce the heat to medium and cook for about 15 minutes, stirring occasionally, until the pearls become translucent.
  2. Remove the saucepan from heat and let the tapioca sit for an additional 10 minutes. Drain the pearls in a fine mesh strainer and rinse them under cold water to stop the cooking process.
  3. In a large bowl, combine the cooked tapioca pearls, diced mango, coconut milk, sweetened condensed milk, and salt. Stir gently until well mixed.
  4. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the mixture to chill.
  5. Serve in individual bowls or cups, garnished with fresh mint leaves if desired.
