Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup sliced pepperoncini peppers (jarred)
- 1 teaspoon dried Italian seasoning
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, garlic powder, and onion powder. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in the heavy cream, sliced pepperoncini peppers, and Italian seasoning. Allow the mixture to simmer for about 3-4 minutes until slightly thickened.
- Return the cooked chicken to the skillet and stir in the Parmesan cheese. Cook for an additional 2-3 minutes until the cheese is melted and the chicken is heated through.
- Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- Add a handful of fresh spinach or kale to the skillet during the last few minutes of cooking for extra nutrients and color.
