There’s nothing more comforting than a warm bowl of creamy tortellini soup on a chilly day. Packed with tender cheese tortellini, fresh spinach, and a velvety tomato-cream broth, this soup is the ultimate quick and hearty meal for any occasion.
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 onion, diced
- 2 garlic cloves, minced
- ½ teaspoon dried basil
- 1 teaspoon Italian seasoning
- Pinch of crushed red pepper flakes
- 3 cups vegetable broth
- 14.5 oz canned diced tomatoes
- 8 oz tomato sauce
- ½ cup heavy cream or half and half
- 8 oz cheese tortellini (refrigerated)
- 1 ½ cups fresh spinach (packed)
- ½ cup grated Parmesan cheese
- ¼ cup fresh basil, chopped
- Salt and freshly ground black pepper to taste
- ¼ cup all-purpose flour
Instructions
- Prepare the Base:
- Heat olive oil and butter in a large saucepan over medium heat.
- Sauté diced onion for about 5 minutes until translucent. Add minced garlic and red pepper flakes; cook for another minute.
- Make the Roux:
- Sprinkle flour into the pan, stirring constantly for about one minute to form a smooth base for the soup.
- Build the Broth:
- Pour in vegetable broth, diced tomatoes, and tomato sauce. Add Italian seasoning, dried basil, salt, and pepper. Stir well and bring to a gentle boil.
- Cook the Tortellini:
- Add cheese tortellini to the boiling broth. Cook for 5–7 minutes or until tender.
- Finish with Spinach and Cream:
- Remove the soup from heat. Stir in fresh spinach, Parmesan cheese, and heavy cream. The spinach will wilt perfectly, and the cream will create a luscious texture.
- Garnish and Serve:
- Top with freshly chopped basil for a bright, herby finish. Serve warm with crusty bread or a simple salad.
Notes
Tips for Success:
- Use fresh, refrigerated tortellini for the best flavor and texture.
- For added protein, stir in cooked sausage or shredded chicken.
- Adjust the spice by modifying the amount of crushed red pepper flakes.
- Grate Parmesan cheese fresh for a richer, creamier taste.
- Add more or less broth to achieve your preferred soup consistency.
