Description

There’s nothing more comforting than a warm bowl of creamy tortellini soup on a chilly day. Packed with tender cheese tortellini, fresh spinach, and a velvety tomato-cream broth, this soup is the ultimate quick and hearty meal for any occasion.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, diced
  • 2 garlic cloves, minced
  • ½ teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • Pinch of crushed red pepper flakes
  • 3 cups vegetable broth
  • 14.5 oz canned diced tomatoes
  • 8 oz tomato sauce
  • ½ cup heavy cream or half and half
  • 8 oz cheese tortellini (refrigerated)
  • 1 ½ cups fresh spinach (packed)
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • Salt and freshly ground black pepper to taste
  • ¼ cup all-purpose flour

Instructions

  1. Prepare the Base:
    • Heat olive oil and butter in a large saucepan over medium heat.
    • Sauté diced onion for about 5 minutes until translucent. Add minced garlic and red pepper flakes; cook for another minute.
  2. Make the Roux:
    • Sprinkle flour into the pan, stirring constantly for about one minute to form a smooth base for the soup.
  3. Build the Broth:
    • Pour in vegetable broth, diced tomatoes, and tomato sauce. Add Italian seasoning, dried basil, salt, and pepper. Stir well and bring to a gentle boil.
  4. Cook the Tortellini:
    • Add cheese tortellini to the boiling broth. Cook for 5–7 minutes or until tender.
  5. Finish with Spinach and Cream:
    • Remove the soup from heat. Stir in fresh spinach, Parmesan cheese, and heavy cream. The spinach will wilt perfectly, and the cream will create a luscious texture.
  6. Garnish and Serve:
    • Top with freshly chopped basil for a bright, herby finish. Serve warm with crusty bread or a simple salad.

Notes

Tips for Success:

  • Use fresh, refrigerated tortellini for the best flavor and texture.
  • For added protein, stir in cooked sausage or shredded chicken.
  • Adjust the spice by modifying the amount of crushed red pepper flakes.
  • Grate Parmesan cheese fresh for a richer, creamier taste.
  • Add more or less broth to achieve your preferred soup consistency.
