Ingredients

Main Ingredients

  • 2 cups cooked shredded chicken
  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 (4 oz) can green chilies
  • 4 cups chicken broth
  • 1 cup frozen corn (optional)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 4 oz cream cheese, softened
  • ½ cup heavy cream
  • Salt & black pepper, to taste

Optional Toppings

  • Shredded cheese (cheddar, Monterey Jack, or Pepper Jack)
  • Chopped fresh cilantro
  • Sliced jalapeños
  • Sour cream
  • A squeeze of fresh lime juice

Instructions

1️⃣ Sauté the Aromatics

  • Heat a large pot over medium heat.
  • Add diced onion and minced garlic, then sauté until softened and fragrant (about 3-4 minutes).

2️⃣ Add Seasonings & Green Chilies

  • Stir in the green chilies, cumin, chili powder, smoked paprika, salt, and pepper.
  • Cook for 1-2 minutes to enhance the flavors.

3️⃣ Simmer the Broth & Beans

  • Pour in the chicken broth and bring to a gentle simmer.
  • Add the white beans, shredded chicken, and frozen corn (if using).
  • Let everything simmer for 15-20 minutes to meld the flavors.

4️⃣ Make It Creamy

  • Stir in the cream cheese until fully melted.
  • Pour in the heavy cream and mix until smooth.

5️⃣ Serve & Garnish

  • Ladle the chili into bowls and add desired toppings like cheese, cilantro, or a squeeze of lime.
  • Serve hot and enjoy!

Notes

  • Use Rotisserie Chicken – It’s a great time-saver and adds rich flavor.
  • For a Thicker Chili – Mash some of the beans before adding them.
  • Make It Spicier – Add diced jalapeños, cayenne pepper, or hot sauce.
  • Dairy-Free Option – Use coconut cream instead of heavy cream and swap cream cheese for a dairy-free alternative.
