These Crispy Baked Chicken Tenders deliver all the crunch and flavor of fried chicken without the guilt. Perfectly seasoned and oven-baked, they’re a quick and easy meal the whole family will love!

Ingredients

Egg Mixture:

  • 1 large egg
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (or juice of ½ a lemon)
  • 1 tablespoon fresh parsley, chopped
  • 2 teaspoons garlic, minced
  • ¾ teaspoon salt
  • ¼ teaspoon cracked pepper

Main Ingredient:

  • 28 ounces chicken tenders

Breading:

  • 1 cup Panko breadcrumbs
  • ½ cup regular breadcrumbs (seasoned)
  • 1 teaspoon mild paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ cup Parmesan cheese, grated

Instructions

  • Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
    • Lightly grease a baking tray with cooking spray or a thin coat of oil to prevent sticking.
  • Prepare the Egg Mixture:
    • In a large bowl, whisk together egg, olive oil, lemon juice, parsley, minced garlic, salt, and pepper.
    • Dip the chicken tenders into this mixture, ensuring they are well-coated. Let them sit for 5 minutes.
  • Make the Breading Mixture:
    • In another bowl, combine Panko breadcrumbs, seasoned breadcrumbs, paprika, garlic powder, onion powder, and grated Parmesan cheese.
    • Mix thoroughly to ensure even seasoning distribution.
  • Bread the Chicken Tenders:
    • Remove chicken tenders from the egg mixture, letting any excess drip off.
    • Dredge the tenders in the breadcrumb mixture, pressing lightly to ensure an even coating.
    • Place the coated tenders on the prepared baking tray in a single layer.
  • Bake the Tenders:
    • Bake in the preheated oven for 10 minutes.
    • Flip the tenders and bake for an additional 5–10 minutes, or until the chicken is cooked through and the coating is golden and crispy.
    • For extra crunch, broil the tenders for the last 2–3 minutes, keeping a close eye to prevent burning.
  • Serve and Enjoy:
    • Let the tenders cool for a few minutes before serving.
    • Pair with your favorite dipping sauces and sides for a complete meal.

Notes

  • Gluten-Free: Use gluten-free breadcrumbs and almond flour.
