Ingredients

For the Fries:

  • Large portobello mushrooms – 2
  • Flour – ⅓ cup
  • Eggs (beaten) – 2
  • Panko breadcrumbs – ¾ cup
  • Parmesan cheese (grated) – ¼ cup
  • Italian seasoning – 1 ½ tsp
  • Salt – To taste
  • Pepper – To taste

For the Aioli:

  • Mayonnaise – ⅓ cup
  • Fresh lemon juice – 2 tsp
  • Lemon zest (optional) – ½ tsp
  • Garlic (pressed or minced) – 1 small clove
  • Freshly cracked pepper – To taste
  • Sea salt (optional) – To taste

Instructions

  1. Preheat the Oven
    • Preheat the oven to 425°F (225°C).
    • Place a wire rack on a baking sheet and lightly coat it with cooking spray. Set aside.
  2. Prepare the Mushrooms
    • Remove the stems from the portobello mushrooms and discard.
    • Use a spoon to scrape out the gills from underneath the caps.
    • Slice the mushrooms into strips approximately ¼ inch thick.
  3. Set Up the Coating Stations
    • Prepare three separate bowls:
      • Bowl 1: Add flour.
      • Bowl 2: Beat the eggs.
      • Bowl 3: Combine Panko breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Coat the Mushroom Fries
    • Dip each mushroom strip into the flour, coating evenly.
    • Next, dip it into the beaten eggs, letting excess drip off.
    • Finally, coat the strip in the breadcrumb mixture, pressing gently to adhere.
    • Place each coated strip on the prepared wire rack.
  5. Bake to Crispy Perfection
    • Bake the fries for 10–14 minutes, or until golden brown and crispy.
    • Check frequently to avoid over-browning.
  6. Prepare the Aioli
    • In a small bowl, whisk together mayonnaise, lemon juice, lemon zest, garlic, and cracked pepper.
    • Adjust seasoning with salt if needed.
  7. Serve and Enjoy
    • Arrange the mushroom fries on a serving platter.
    • Serve with the aioli on the side for dipping.
