Instructions

Step 1: Prepare the Cabbage

  1. Thinly slice the cabbage and place it in a large bowl.
  2. Gently squeeze the cabbage with your hands to soften it slightly.

Step 2: Make the Batter

  1. In a separate large bowl, combine flour, scallions, garlic powder, onion powder, Italian seasoning, baking powder, salt, black pepper, and red pepper flakes.
  2. In another bowl, whisk together milk, eggs, olive oil, and lemon juice.
  3. Slowly pour the wet mixture into the dry ingredients, stirring until just combined.
  4. Add the sliced cabbage and mix well to coat evenly in the batter.

Step 3: Cook the Fritters

  1. Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.
  2. Drop ¼ cup portions of the batter into the pan, flattening slightly with a spatula.
