Crispy Fondant Potatoes are a delicious and elegant side dish featuring perfectly seared and roasted potatoes infused with garlic and herbs.
Ingredients
- 4 large russet potatoes, peeled
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 cups chicken or vegetable broth
- 2 cloves garlic, crushed
- 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Cut the peeled potatoes into cylindrical shapes, about 2 inches tall and 1 inch in diameter.
- In a large oven-safe skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until melted and hot.
- Carefully add the potatoes to the skillet, cut side down. Sear for about 5-7 minutes until golden brown.
- Flip the potatoes to the other cut side and add the remaining butter, garlic, thyme, salt, and pepper to the skillet.
- Pour in the chicken or vegetable broth until it reaches halfway up the sides of the potatoes.
- Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the potatoes are tender and the broth has reduced.
- Remove the skillet from the oven and let the potatoes rest for a few minutes before serving.
Notes
- For extra flavor, add a splash of white wine to the broth before roasting.
- Experiment with different herbs like rosemary or parsley for a unique twist.
