Description

Crispy Fondant Potatoes are a delicious and elegant side dish featuring perfectly seared and roasted potatoes infused with garlic and herbs.


Ingredients

  • 4 large russet potatoes, peeled
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cups chicken or vegetable broth
  • 2 cloves garlic, crushed
  • 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the peeled potatoes into cylindrical shapes, about 2 inches tall and 1 inch in diameter.
  3. In a large oven-safe skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until melted and hot.
  4. Carefully add the potatoes to the skillet, cut side down. Sear for about 5-7 minutes until golden brown.
  5. Flip the potatoes to the other cut side and add the remaining butter, garlic, thyme, salt, and pepper to the skillet.
  6. Pour in the chicken or vegetable broth until it reaches halfway up the sides of the potatoes.
  7. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the potatoes are tender and the broth has reduced.
  8. Remove the skillet from the oven and let the potatoes rest for a few minutes before serving.

  • For extra flavor, add a splash of white wine to the broth before roasting.
