Ingredients
For the Hot Honey:
- ⅓ cup (110g) honey
- 1½ tsp hot sauce (such as Frank’s or Cholula)
- ¾ tsp chili flakes
For the Chicken:
- 2 chicken breasts (around 9oz each)
- 2 tsp paprika
- 1 tsp salt
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp black pepper
- ¼ tsp cayenne pepper
- 35g (¼ cup) plain flour
- 2 eggs, beaten
- 65g (1 cup) Panko breadcrumbs
- Vegetable oil, as needed (around 6-8 tbsp)
- 200g (7oz) feta, crumbled
Instructions
- Make the Hot Honey
- In a small bowl, mix honey, hot sauce, and chili flakes.
- Warm in the microwave for about 20 seconds or heat on the stovetop until just simmering.
- Stir and let cool to allow flavors to infuse.
- Prepare the Chicken
- Slice each chicken breast horizontally to create four even pieces.
- In a bowl, mix paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
- Set up a breading station:
- Dish 1: Flour + half of the seasoning mix
- Dish 2: Beaten eggs
- Dish 3: Panko breadcrumbs + remaining seasoning
- Coat each piece of chicken in flour, then dip in egg, and finally coat generously with Panko.
- Cook the Chicken
- Heat vegetable oil in a pan over medium-high heat.
- Fry the chicken for 3-4 minutes per side until golden brown and crispy.
- Remove and place on a wire rack to drain excess oil.
- Add Feta & Grill
- Sprinkle crumbled feta over the crispy chicken.
- Place under a grill (broiler) on high heat until the feta softens and turns golden.
- Drizzle & Serve
- Generously drizzle hot honey over the feta-topped chicken.
- Serve immediately with sides like potato wedges or an arugula salad.
Notes
- Adjust the spice level by increasing or reducing the chili flakes in the hot honey.
- For a healthier alternative, bake at 220°C/430°F for 18-20 minutes or air-fry at 200°C/400°F for 12-15 minutes.
- Store leftover hot honey in an airtight container for up to a week.
- Reheat chicken in an oven or air fryer at 180°C/350°F for crispiness.
