2 pounds baby potatoes, halved

1/4 cup olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)
Instructions

Preheat Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. -
Prep Potatoes
Wash and halve the baby potatoes. Pat them dry and place them in a large bowl. -
Mix Seasonings
In a small bowl, mix garlic powder, onion powder, oregano, salt, black pepper, and Parmesan cheese. -
Coat Potatoes
Pour olive oil over the potatoes and toss to coat. Sprinkle the Parmesan mixture over the potatoes and toss again until evenly coated. -
Bake
Spread the potatoes in a single layer on the prepared baking sheet, cut side down. Bake for 25–30 minutes, or until golden and crispy. Optional: Broil for the last 2–3 minutes for extra crispiness.

Remove from oven, let cool slightly, then garnish with chopped fresh parsley. Serve warm.
