Crispy Rolled Chipotle Beef Tacos are a delicious and spicy treat that will impress your guests with their flavor and crunch.
Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon chipotle peppers in adobo sauce, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- 8 small corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded iceberg lettuce
- 1 medium tomato, chopped
- 1/2 cup Greek yogurt
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat your oven to 400°F.
- In a large frying pan, heat the olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 4-5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef to the pan, breaking it apart with a spatula. Cook until well-browned, approximately 6-8 minutes, and drain any excess grease.
- Mix in the chipotle peppers, cumin, chili powder, smoked paprika, salt, and pepper. Simmer for 3-4 minutes to meld the flavors.
- Warm the corn tortillas in a separate skillet for about 30 seconds on each side until soft.
- Spoon about 2 tablespoons of the beef filling onto each tortilla, sprinkle with Monterey Jack cheese, and roll them up tightly.
- Arrange the rolled taquitos seam-side down on a baking sheet and bake for 15-20 minutes, or until crispy and golden brown.
- Serve garnished with shredded lettuce, chopped tomato, Greek yogurt, and fresh cilantro.
Notes
- For extra heat, add more chipotle peppers to the beef mixture.
- These taquitos can be made ahead of time and frozen before baking.
