Crispy Rolled Chipotle Beef Tacos are a delicious and spicy treat that will impress your guests with their flavor and crunch.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon chipotle peppers in adobo sauce, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato, chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat your oven to 400°F.
  2. In a large frying pan, heat the olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 4-5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground beef to the pan, breaking it apart with a spatula. Cook until well-browned, approximately 6-8 minutes, and drain any excess grease.
  5. Mix in the chipotle peppers, cumin, chili powder, smoked paprika, salt, and pepper. Simmer for 3-4 minutes to meld the flavors.
  6. Warm the corn tortillas in a separate skillet for about 30 seconds on each side until soft.
  7. Spoon about 2 tablespoons of the beef filling onto each tortilla, sprinkle with Monterey Jack cheese, and roll them up tightly.
  8. Arrange the rolled taquitos seam-side down on a baking sheet and bake for 15-20 minutes, or until crispy and golden brown.
  9. Serve garnished with shredded lettuce, chopped tomato, Greek yogurt, and fresh cilantro.

Notes

  • For extra heat, add more chipotle peppers to the beef mixture.
