Ingredients

For the Filling:

  • 2 cups cooked chicken (shredded or chopped)
  • 1 cup corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup red bell pepper (diced)
  • 1/4 cup jalapeño (deseeded and diced)
  • 1/2 tablespoon cumin
  • 1/2 tablespoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Monterey Jack cheese (shredded)

For the Wrapper:

  • 1 package egg roll wrappers (about 20 wrappers)

For Cooking:

  • Oil (for frying) or cooking spray (for baking)

Instructions

  1. Prepare the Filling – In a large bowl, combine the shredded chicken, corn, black beans, spinach, red bell pepper, and jalapeño. Add cumin, chili powder, salt, and black pepper, then mix well. Stir in the shredded Monterey Jack cheese.
  2. Assemble the Rolls – Place an egg roll wrapper on a clean surface with a corner facing you. Add 2-3 tablespoons of filling to the center. Fold the bottom corner over the filling, then fold in the side corners tightly. Roll up and seal the edges with a little water.
  3. Choose Your Cooking Method:

    For Frying:

    • Heat about 1 inch of oil in a skillet to 350°F (175°C).
    • Fry a few rolls at a time for 2-3 minutes per side until golden brown.
    • Remove and drain on paper towels.

    For Baking:

    • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
