Description

Crispy Veg Spring Rolls are a delicious and healthy snack filled with fresh vegetables and wrapped in a crispy shell.


Ingredients

  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1/2 cup chopped green onions
  • 1/2 cup bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 package (spring roll wrappers, about 1214 wrappers)
  • Vegetable oil for frying

Instructions

  1. In a large skillet, heat the sesame oil over medium heat. Add the garlic and ginger, sauté for about 1 minute until fragrant.
  2. Add the shredded cabbage, carrots, bean sprouts, green onions, and bell pepper to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
  3. Pour in the soy sauce and stir to combine. Cook for another 2 minutes, then remove from heat and let the filling cool slightly.
  4. Lay a spring roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the vegetable filling near the corner.
  5. Fold the corner over the filling, then fold in the sides and roll tightly away from you. Seal the edge with a little water. Repeat with remaining wrappers and filling.
  6. Heat vegetable oil in a deep skillet or pot over medium-high heat. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
  7. Serve hot with your favorite dipping sauce, such as sweet chili sauce or soy sauce.

  • For a healthier option, bake the spring rolls at 400°F for 20-25 minutes, brushing them lightly with oil before baking.
