Ingredients

For the Chicken

  • 6 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme

For the Sauce

  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup Parmesan cheese (grated)
  • 4 cloves garlic (minced)
  • ⅓ cup sun-dried tomatoes (chopped)
  • 1 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning

For Garnish

  • Fresh parsley (chopped)
  • Extra Parmesan cheese

Instructions

1. Prepare the Chicken

  • Pat dry the chicken breasts with paper towels.
  • Season both sides with salt, pepper, oregano, and thyme.
  • In a skillet, heat olive oil over medium heat and sear the chicken for 2–3 minutes per side until golden brown. (This adds depth of flavor!)

2. Make the Creamy Sauce

  • In the same skillet, sauté minced garlic for 30 seconds until fragrant.
  • Pour in the chicken broth and scrape up any browned bits from the pan.
  • Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, red pepper flakes (if using), and Italian seasoning.
  • Let the sauce simmer for 2–3 minutes until slightly thickened.

3. Slow Cook the Chicken

  • Place the seared chicken breasts in the crock pot.
  • Pour the creamy sauce over the chicken, making sure each piece is coated.
  • Cover and cook on LOW for 4–6 hours or on HIGH for 2–3 hours until the chicken is tender.

4. Garnish & Serve

  • Transfer the chicken to a serving platter.
  • Pour the creamy sauce over the top.
  • Garnish with fresh parsley and extra Parmesan.
  • Serve hot and enjoy with your favorite sides!

Notes

  • Searing the chicken before slow cooking enhances the flavor and locks in moisture.
  • For a thicker sauce, stir in 1 tsp cornstarch mixed with 1 tbsp water at the end.
  • For extra juiciness, you can substitute boneless chicken thighs.
  • Adjust spice levels by increasing or omitting red pepper flakes.
  • Pairs well with pasta, rice, garlic bread, or roasted vegetables.
