Ingredients
- 8 large croissants
- 8 large eggs
- 1 cup shredded cheddar cheese
- 8 slices cooked bacon or sausage patties
- 1/2 cup milk
- Salt and pepper to taste
- 2 tablespoons butter
- Fresh spinach or arugula (optional)
Instructions
- Preheat the oven to 350°F.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- In a skillet over medium heat, melt the butter. Pour in the egg mixture and cook, stirring gently, until the eggs are just set but still soft, about 5-7 minutes. Remove from heat.
- Slice each croissant in half horizontally. Place the bottom half on a baking sheet.
- On each croissant bottom, layer a slice of bacon or a sausage patty, followed by a generous scoop of scrambled eggs, and then sprinkle with cheddar cheese. Add fresh spinach or arugula if desired.
- Place the top half of the croissant on each sandwich.
- Bake in the preheated oven for about 10 minutes, or until the cheese is melted and the croissants are warm.
