Description
A delicious and satisfying taco wrap filled with seasoned ground turkey, cheese, fresh vegetables, and Greek yogurt, all wrapped in a crispy tortilla.
Ingredients
- 1 pound ground turkey
- 1 tablespoon taco spice blend
- 1 cup Monterey Jack cheese, shredded
- 1 cup fresh spinach, chopped
- 1 medium avocado, sliced
- 1/2 cup Greek yogurt
- 4 large whole wheat tortillas
- 4 mini corn tortillas
- Olive oil for cooking
Instructions
- In a frying pan over medium heat, brown the ground turkey for about 6-8 minutes, breaking it apart as it cooks. Once browned, mix in the taco spice blend and a splash of water if needed, cooking for another 3-4 minutes until well combined. Remove from heat and set aside.
- On a flat surface, place a large whole wheat tortilla. In the center, layer a generous portion of the seasoned turkey, then add a mini corn tortilla on top. Pile on the shredded cheese, chopped spinach, avocado slices, and a spoonful of Greek yogurt.
- Carefully fold the tortilla edges inward, creating a secure pocket around the filling. Ensure the folds are tight to keep everything contained.
- Heat a skillet over medium heat and drizzle with olive oil. Place the wrapped tortilla seam-side down in the skillet. Cook for about 4-5 minutes until the bottom is crispy and golden, then flip and cook for another 4-5 minutes on the other side.
- Once cooked, remove from the skillet and allow to cool slightly before cutting in half. Serve immediately for a delicious meal.

- Feel free to customize the fillings with your favorite vegetables or proteins.
- For a spicier version, add jalapeños or hot sauce.
