A rich and creamy dark chocolate cheesecake infused with fresh blackberries, perfect for chocolate lovers.
Ingredients
- 1 ½ cups chocolate graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 8 ounces dark chocolate, melted and slightly cooled
- 1 cup fresh blackberries
- 1 tablespoon cornstarch
- 3 large eggs
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine the chocolate graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the powdered sugar and continue to mix until well incorporated.
- Stir in the vanilla extract and sour cream until smooth.
- Pour the melted dark chocolate into the cream cheese mixture and mix until fully combined.
- In a small bowl, toss the blackberries with cornstarch to coat them lightly. Gently fold the blackberries into the cheesecake batter.
- Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 55-60 minutes or until the edges are set and the center is slightly jiggly.
- Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
- For a richer flavor, consider using a higher percentage of dark chocolate (70% or more).
- You can substitute the blackberries with raspberries or strawberries for a different fruit flavor.
- For a lighter version, use low-fat cream cheese and sour cream.
