Description

Ingredients

  • 1 ½ cups chocolate graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 8 ounces dark chocolate, melted and slightly cooled
  • 1 cup fresh blackberries
  • 1 tablespoon cornstarch
  • 3 large eggs

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine the chocolate graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add the powdered sugar and continue to mix until well incorporated.
  6. Stir in the vanilla extract and sour cream until smooth.
  7. Pour the melted dark chocolate into the cream cheese mixture and mix until fully combined.
  8. In a small bowl, toss the blackberries with cornstarch to coat them lightly. Gently fold the blackberries into the cheesecake batter.
  9. Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.
  10. Pour the cheesecake batter over the cooled crust in the springform pan.
  11. Bake for 55-60 minutes or until the edges are set and the center is slightly jiggly.
  12. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  13. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
