Description
A rich and indulgent Dark Chocolate Raspberry Cheesecake that combines the flavors of dark chocolate and fresh raspberries for a decadent dessert.
Ingredients
- 1 ½ cups chocolate graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 8 ounces dark chocolate (60-70% cocoa), melted and slightly cooled
- 1 cup fresh raspberries
- ¼ cup raspberry preserves
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan with cooking spray.
- In a medium bowl, combine chocolate graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and vanilla extract, mixing until well incorporated.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
- Pour in the melted dark chocolate and mix until fully combined and smooth.
- Gently fold in the fresh raspberries and raspberry preserves, being careful not to break the raspberries too much.
- Pour the cheesecake batter over the crust in the springform pan, smoothing the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, before serving.
- To serve, carefully remove the sides of the springform pan. Garnish with additional fresh raspberries and a drizzle of melted dark chocolate if desired.
Notes
- For a more intense chocolate flavor, use bittersweet chocolate or add a tablespoon of cocoa powder to the batter.
- Substitute the raspberries with strawberries or blueberries for a different fruit flavor.
