Description

A rich and indulgent Dark Chocolate Raspberry Cheesecake that combines the flavors of dark chocolate and fresh raspberries for a decadent dessert.


Ingredients

  • 1 ½ cups chocolate graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 ounces dark chocolate (60-70% cocoa), melted and slightly cooled
  • 1 cup fresh raspberries
  • ¼ cup raspberry preserves

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan with cooking spray.
  2. In a medium bowl, combine chocolate graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and vanilla extract, mixing until well incorporated.
  4. Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
  5. Pour in the melted dark chocolate and mix until fully combined and smooth.
  6. Gently fold in the fresh raspberries and raspberry preserves, being careful not to break the raspberries too much.
  7. Pour the cheesecake batter over the crust in the springform pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  9. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, before serving.
  10. To serve, carefully remove the sides of the springform pan. Garnish with additional fresh raspberries and a drizzle of melted dark chocolate if desired.

Notes

  • For a more intense chocolate flavor, use bittersweet chocolate or add a tablespoon of cocoa powder to the batter.
