Ingredients
For the Truffle Filling:
- 8 oz (227 g) full-fat cream cheese, at room temperature
- 1/4 cup (57 g) unsalted butter, at room temperature
- 1/4 cup (57 g) coconut oil, solid but soft enough to scoop
- 7 1/2 cups (848 g) confectioners’ sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 12 oz (340 g) sweetened shredded coconut
- 48 whole almonds
For the Chocolate Coating:
- 20 oz milk chocolate
- 1 tablespoon (14 g) coconut oil

Prepare the Truffle Filling:
- In a large mixing bowl, beat the cream cheese, butter, and coconut oil until smooth and creamy.
- Gradually add the confectioners’ sugar, one cup at a time, mixing well after each addition.
- Add the salt, vanilla extract, and almond extract, mixing to combine.
- Stir in the shredded coconut until evenly distributed.

Shape the Truffles:
- Scoop out tablespoon-sized portions of the mixture and roll into smooth balls using your hands.
- Press a whole almond into the center of each ball, making sure it’s fully covered.
- Place the truffles on a parchment-lined baking sheet and refrigerate for at least 2 hours until firm.

Coat in Chocolate:
- Melt the milk chocolate and coconut oil together using a double boiler or microwave in 20-second intervals, stirring frequently until smooth.
- Dip each truffle into the melted chocolate, letting the excess drip off before placing it back on the parchment paper.
- Allow the chocolate to set at room temperature, or refrigerate for faster results.
