Ingredients

  • 1/4 cup (57 g) unsalted butter, at room temperature
  • 1/4 cup (57 g) coconut oil, solid but soft enough to scoop
  • 7 1/2 cups (848 g) confectioners’ sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 12 oz (340 g) sweetened shredded coconut
  • 48 whole almonds

For the Chocolate Coating:

  • 20 oz milk chocolate
  • 1 tablespoon (14 g) coconut oil

Instructions

  1. Prepare the Truffle Filling:

    • In a large mixing bowl, beat the cream cheese, butter, and coconut oil until smooth and creamy.
    • Gradually add the confectioners’ sugar, one cup at a time, mixing well after each addition.
    • Add the salt, vanilla extract, and almond extract, mixing to combine.
    • Stir in the shredded coconut until evenly distributed.
  2. Shape the Truffles:

    • Scoop out tablespoon-sized portions of the mixture and roll into smooth balls using your hands.
    • Press a whole almond into the center of each ball, making sure it’s fully covered.
    • Place the truffles on a parchment-lined baking sheet and refrigerate for at least 2 hours until firm.
  3. Coat in Chocolate:

    • Melt the milk chocolate and coconut oil together using a double boiler or microwave in 20-second intervals, stirring frequently until smooth.
    • Dip each truffle into the melted chocolate, letting the excess drip off before placing it back on the parchment paper.
    • Allow the chocolate to set at room temperature, or refrigerate for faster results.
  4. Serve and Store:

    • Once the chocolate has hardened, the truffles are ready to enjoy.
    • Store them in an airtight container in the refrigerator for up to one week.
