Ingredients
For the Cake:
- 1 box (15.25 ounces) yellow cake mix
- Eggs, oil, and water as listed on the cake mix box
- 1 jar (16 ounces) caramel topping
For the Apple Cider Whipped Cream:
- 1½ cups confectioners’ sugar
- 1 container (16 ounces) whipped topping (such as Cool Whip), thawed
- 1 tablespoon apple cider
- ½ teaspoon ground cinnamon
Instructions
Prepare the Cake:
- Preheat the oven according to the yellow cake mix instructions.
- Prepare the cake batter by following the directions on the box, using the required eggs, oil, and water.
- Pour the batter into a greased 9×13-inch baking dish and bake as instructed on the package until golden brown and a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool slightly.
Add the Caramel Topping:
- While the cake is still warm, poke holes all over its surface using a skewer or fork.
- Pour the caramel topping evenly over the cake, allowing it to seep into the holes.
- Let the cake cool completely, so the caramel fully absorbs into the cake.
Make the Apple Cider Whipped Cream:
- In a medium-sized bowl, combine the confectioners’ sugar, thawed whipped topping, apple cider, and ground cinnamon.
- Gently fold the ingredients together using a spatula until smooth and creamy.
- Chill the whipped cream in the refrigerator for at least 15–20 minutes to let the flavors blend and firm up the consistency.
Assemble the Cake:
- Once the cake has cooled and the caramel has soaked in, spread the apple cider whipped cream evenly over the top.
- For an extra decorative touch, drizzle more caramel sauce over the whipped cream or sprinkle ground cinnamon.
Serve and Store:
- Slice the cake into squares and serve immediately.
- Store any leftovers in an airtight container in the refrigerator for up to 2 days.
Notes
- Use salted caramel for a sweet-and-savory flavor twist.
- Make sure the cake is completely cool before spreading the whipped topping to prevent melting.
- For homemade whipped cream, beat 1½ cups of heavy whipping cream with 2 tablespoons powdered sugar until stiff peaks form, then fold in the apple cider and cinnamon.
- This cake is best served chilled but can be enjoyed at room temperature too.
