Description
Light, flavorful, and beautifully presented, these zucchini rolls are the perfect blend of crispy zucchini slices, a creamy garlic filling, and fresh garnishes. They’re a crowd-pleasing dish, great for parties, holiday dinners, or even a quick appetizer to impress your guests!
Ingredients
For the Zucchini:
- 3–5 zucchinis
 
For the Batter:
- 3 eggs
 - Flour (enough to coat zucchini slices)
 
For the Filling:
- 5–6 boiled eggs
 - 2 processed cheese wedges
 - 8–10 cloves garlic (minced)
 - 2–3 tbsp mayonnaise or sour cream
 - Salt, to taste
 - A bunch of dill (chopped)
 
For the Garnish:
- 1 tomato (sliced into thin rounds)
 - Parsley (chopped, for sprinkling)
 
Instructions
- 
Prepare the Zucchini:
- Wash and dry the zucchinis. Slice them lengthwise into thin, even slices (about 1/4 inch thick).
 - Whisk eggs with a dash of salt in a bowl. Place flour on a plate for coating.
 - Dip each zucchini slice into the egg mixture, then coat it with flour.
 - Heat oil in a skillet over medium heat and fry the slices until golden brown on both sides. Place on paper towels to remove excess oil.

Prepare the Filling:
- Boil the eggs for about 10 minutes. Peel and finely chop them.
 - In a bowl, combine chopped boiled eggs, processed cheese wedges, minced garlic, and mayonnaise or sour cream. Mix until smooth and creamy.
 - Season with salt and fold in chopped dill.

Assemble the Rolls:
- Lay each zucchini slice flat. Spread a spoonful of the creamy filling onto the slice, then roll it up tightly. Secure with a toothpick if needed.
 - Top each roll with a tomato slice and sprinkle with parsley.

Serve:
- Arrange the rolls on a serving platter. Serve chilled or at room temperature as an appetizer or festive dish.
 
 
Notes
- For a healthier option, bake the zucchini slices at 375°F (190°C) for 10-15 minutes instead of frying.
 - Adjust the filling to taste: add chopped olives, nuts, or grated carrots for extra texture and flavor.
 - Best served chilled after allowing the flavors to meld for 15-20 minutes in the fridge.
