  • Author: Annabel
  • Total Time: 35 minutes
  • Yield: 8-10 rolls

Description

Light, flavorful, and beautifully presented, these zucchini rolls are the perfect blend of crispy zucchini slices, a creamy garlic filling, and fresh garnishes. They’re a crowd-pleasing dish, great for parties, holiday dinners, or even a quick appetizer to impress your guests!

Ingredients

For the Zucchini:

  • 35 zucchinis

For the Batter:

  • 3 eggs
  • Flour (enough to coat zucchini slices)

For the Filling:

  • 56 boiled eggs
  • 2 processed cheese wedges
  • 810 cloves garlic (minced)
  • 23 tbsp mayonnaise or sour cream
  • Salt, to taste
  • A bunch of dill (chopped)

For the Garnish:

  • 1 tomato (sliced into thin rounds)
  • Parsley (chopped, for sprinkling)

Instructions

  • Prepare the Zucchini:

    • Wash and dry the zucchinis. Slice them lengthwise into thin, even slices (about 1/4 inch thick).
    • Whisk eggs with a dash of salt in a bowl. Place flour on a plate for coating.
    • Dip each zucchini slice into the egg mixture, then coat it with flour.
    • Heat oil in a skillet over medium heat and fry the slices until golden brown on both sides. Place on paper towels to remove excess oil.
  • Prepare the Filling:

    • Boil the eggs for about 10 minutes. Peel and finely chop them.
    • In a bowl, combine chopped boiled eggs, processed cheese wedges, minced garlic, and mayonnaise or sour cream. Mix until smooth and creamy.
    • Season with salt and fold in chopped dill.
  • Assemble the Rolls:

    • Lay each zucchini slice flat. Spread a spoonful of the creamy filling onto the slice, then roll it up tightly. Secure with a toothpick if needed.
    • Top each roll with a tomato slice and sprinkle with parsley.
  • Serve:

    • Arrange the rolls on a serving platter. Serve chilled or at room temperature as an appetizer or festive dish.

Notes

  • For a healthier option, bake the zucchini slices at 375°F (190°C) for 10-15 minutes instead of frying.
  • Adjust the filling to taste: add chopped olives, nuts, or grated carrots for extra texture and flavor.
  • Best served chilled after allowing the flavors to meld for 15-20 minutes in the fridge.
