Delicious and Protein-Packed Lentil Patties

Ingredients: 

  • 12 oz (300g) | 1.5 cups lentils 
  • 1 onion, finely chopped 
  • 1 medium-size carrot (2.2 oz | 60g), grated 
  • 1 garlic clove, minced 
  • 1 tbsp tomato paste 
  • 2 tbsp chickpea flour 
  • 1.5 tbsp curry powder 
  • 1/4 tsp red chili flakes (optional) 
  • Salt, to taste 
  • Chopped parsley or cilantro, to taste 
  • A little oil for frying 

Instructions: 

  1. Cook the Lentils: 
  • Rinse the lentils under cold water. Place them in a pot with enough water to cover them and bring to a boil.  
  • Reduce the heat and let simmer for about 20-25 minutes, or until the lentils are tender.  
  1. Prepare the Vegetables: 
  • Warm a bit of oil in a skillet over medium heat. Toss in the finely chopped onion and grated carrot, and sauté for 5-7 minutes until they soften. Mix in the minced garlic and cook for an additional minute. 
  1. Mix the Ingredients: 
  • In a large mixing bowl, combine the cooked lentils, sautéed vegetables, and tomato paste. Lightly mash the mixture using a fork or potato masher. 
  • Add the chickpea flour, curry powder, red chili flakes (if using), salt, and chopped parsley or cilantro. Mix until well combined. Ensure the mixture is firm enough to maintain its shape. If it feels too wet, incorporate a little more chickpea flour. 
  1. Form the Patties: 
  • With your hands, shape the mixture into patties, about the size of your palm. 
  1. Fry the Patties: 
  • Heat a small amount of oil in a large skillet set to medium heat.  
  • Cook the patties for 3-4 minutes per side, until they are golden brown and crispy. 
  1. Serve: 
  • Serve the lentil patties warm, garnished with additional parsley or cilantro if desired. They pair wonderfully with a fresh salad, in a wrap, or on a bun as a veggie burger.
