Ingredients

For the Cupcakes:

  • 120g all-purpose flour
  • 25g cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 125g sugar
  • A pinch of salt
  • ½ teaspoon vanilla powder
  • 220ml milk
  • 50ml vegetable oil
  • ½ teaspoon lemon juice

For the Ganache:

  • 150g dark chocolate, chopped
  • 60g hot milk
  • ½ teaspoon butter

Instructions

1. Prepare the Cupcake Batter

  • Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  • In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Add the sugar and vanilla powder, then mix well.
  • In a separate bowl, combine the milk, vegetable oil, and lemon juice. Stir and let it sit for a few minutes to curdle slightly, mimicking buttermilk.
  • Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing to ensure a light texture.

2. Bake the Cupcakes

  • Spoon the batter into the cupcake liners, filling each about two-thirds full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove the cupcakes from the oven and let them cool in the tin for a few minutes. Transfer to a wire rack to cool completely before frosting.

3. Make the Ganache

  • Place the chopped dark chocolate in a heatproof bowl.
  • Heat the milk in a saucepan until it is just about to boil. Pour the hot milk over the chocolate and let it sit for one minute.
  • Add the butter and stir until the mixture is smooth and glossy. Allow the ganache to cool until it thickens to a spreadable consistency.

4. Frost the Cupcakes

  • Once the cupcakes are completely cool, use a spatula or piping bag to frost each cupcake with the ganache.
  • Add sprinkles, chocolate curls, or a dusting of cocoa powder for decoration if desired.
