  • 1 cup sharp cheddar cheese, shredded (divided)

Instructions

Step 1: Bake the Potatoes

  2. Shred the chicken into bite-sized pieces and set aside.

Step 3: Cook the Bacon

  1. Cook the bacon in a skillet over medium heat until crispy.
  2. Let the bacon cool, then crumble it into small pieces and set aside.

Step 4: Make the Filling

  1. In a large mixing bowl, combine the shredded chicken, softened cream cheese, ranch seasoning mix, and half of the shredded cheddar cheese.

Step 5: Hollow the Potatoes

  1. Once the baked potatoes are cool enough to handle, slice each one in half lengthwise.
