Ingredients

  • 1 kg (2.2 lbs) potatoes, peeled and diced
  • 3 eggs
  • 1 teaspoon salt
  • Pepper to taste
  • 1 teaspoon oregano
  • Vegetable oil for frying
  • 1 medium onion, chopped
  • 3 sausages (~150g total), sliced
  • 300g cherry tomatoes, halved
  • 100g grated cheese

Instructions

1. Prepare the Potatoes

  • Dice the peeled potatoes into small, even-sized cubes for consistent cooking.
  • Heat a generous amount of vegetable oil in a large skillet over medium heat.
  • Add the diced potatoes to the skillet and season with salt, pepper, and oregano.
  • Cook for 15–20 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

2. Cook the Add-Ins

  • In a separate pan, sauté the chopped onion in a little vegetable oil until translucent.
  • Add the sliced sausages and cook until browned and slightly crisp.
  • Stir in the cherry tomatoes and cook until softened, about 2–3 minutes.

3. Combine and Cook

  • Add the onion, sausage, and tomato mixture to the skillet with the crispy potatoes. Mix well to combine all the ingredients.
  • Make three small wells in the potato mixture. Crack one egg into each well.
  • Cover the skillet with a lid and cook for 3–5 minutes or until the eggs are set to your preferred doneness.

4. Add the Cheese

  • Sprinkle the grated cheese evenly over the skillet.
  • Cover again for 2–3 minutes, allowing the cheese to melt into a delicious topping.
