- 1 medium onion, chopped
- 3 sausages (~150g total), sliced
- 300g cherry tomatoes, halved
- 100g grated cheese
Instructions
1. Prepare the Potatoes
- Dice the peeled potatoes into small, even-sized cubes for consistent cooking.
- Heat a generous amount of vegetable oil in a large skillet over medium heat.
- Add the diced potatoes to the skillet and season with salt, pepper, and oregano.
- Cook for 15–20 minutes, stirring occasionally, until the potatoes are golden brown and crispy.
2. Cook the Add-Ins
- In a separate pan, sauté the chopped onion in a little vegetable oil until translucent.
- Add the sliced sausages and cook until browned and slightly crisp.
- Stir in the cherry tomatoes and cook until softened, about 2–3 minutes.
3. Combine and Cook

- Make three small wells in the potato mixture. Crack one egg into each well.
