Ingredients
- 2 medium zucchini (grated)
- 5 eggs
- 2 tablespoons sour cream
- 1 tablespoon cornstarch
- 80 g flour
- 100 g cheese (grated)
- 2 tomatoes (sliced, for serving)
- 1 clove garlic (minced)
- Vegetable oil (for frying)
- Salt (to taste)
- Black pepper (to taste)
- 1 teaspoon paprika
- Dried basil (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
1. Prepare the Zucchini:
- Grate the zucchini and transfer it to a colander.
- Sprinkle with a pinch of salt and let it sit for 10 minutes to release excess moisture.
- Squeeze the grated zucchini with a clean kitchen towel or paper towels to remove as much liquid as possible.
2. Make the Batter:
- In a large mixing bowl, beat the eggs.
- Add sour cream, cornstarch, flour, grated cheese, minced garlic, paprika, dried basil, salt, and black pepper.
- Mix until smooth.
- Fold in the prepared zucchini, ensuring it is evenly incorporated into the batter.
3. Cook the Fritters:
- Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom.
- Scoop spoonfuls of the batter into the skillet. Press them gently with the back of a spoon to form fritters.
- Fry each side for about 3–4 minutes, or until golden brown and crispy.
4. Drain and Serve:
- Transfer the cooked fritters to a plate lined with paper towels to remove excess oil.
- Garnish with fresh parsley and serve warm with sliced tomatoes or your favorite dipping sauce.
Notes
- Be sure to squeeze out the moisture from the zucchini thoroughly for crispy fritters.
- Use a cheese that melts well, such as mozzarella or cheddar.
- These fritters are best served fresh and warm but can be reheated in a skillet for added crispiness.
