Ingredients

  • 2 medium zucchini (grated)
  • 5 eggs
  • 2 tablespoons sour cream
  • 1 tablespoon cornstarch
  • 80 g flour
  • 100 g cheese (grated)
  • 2 tomatoes (sliced, for serving)
  • 1 clove garlic (minced)
  • Vegetable oil (for frying)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 teaspoon paprika
  • Dried basil (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

1. Prepare the Zucchini:

  • Grate the zucchini and transfer it to a colander.
  • Sprinkle with a pinch of salt and let it sit for 10 minutes to release excess moisture.
  • Squeeze the grated zucchini with a clean kitchen towel or paper towels to remove as much liquid as possible.

2. Make the Batter:

  • In a large mixing bowl, beat the eggs.
  • Add sour cream, cornstarch, flour, grated cheese, minced garlic, paprika, dried basil, salt, and black pepper.
  • Mix until smooth.
  • Fold in the prepared zucchini, ensuring it is evenly incorporated into the batter.

3. Cook the Fritters:

  • Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom.
  • Scoop spoonfuls of the batter into the skillet. Press them gently with the back of a spoon to form fritters.
  • Fry each side for about 3–4 minutes, or until golden brown and crispy.

4. Drain and Serve:

  • Transfer the cooked fritters to a plate lined with paper towels to remove excess oil.
