Delight in Tiramisu Cupcakes for a Sweet Surprise!
Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup buttermilk
- 1 cup brewed espresso, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 cup mascarpone cheese
- 1 cup heavy cream
- ¼ cup powdered sugar
- 1 teaspoon cocoa powder (for dusting)
Instructions
- Preheat the oven to 350°F. Line a standard muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
- Fill each cupcake liner about two-thirds full with the batter. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- In a shallow dish, combine the cooled espresso and coffee liqueur (if using). Once the cupcakes are cool, dip the tops of each cupcake into the espresso mixture briefly to soak.
- In a large bowl, beat the mascarpone cheese, heavy cream, and powdered sugar together until soft peaks form.
- Frost each cupcake generously with the mascarpone mixture. Dust with cocoa powder before serving.
Notes
- These cupcakes can be made a day in advance and stored in the refrigerator.
- For a chocolate twist, add ¼ cup of cocoa powder to the batter for a chocolate cupcake base.
- For a lighter version, substitute Greek yogurt for the mascarpone cheese.
