Filled with seasoned minced meat, melty mozzarella, and a hint of eggy goodness, this dish is an experience you won’t forget. Perfect for any meal of the day, it’s quick, easy, and absolutely delicious.


Ingredients

  • 380 grams of minced meat
  • 2 eggs
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • Olive oil (for cooking)
  • 4 tortillas
  • Melted butter (for brushing)
  • Mozzarella cheese, shredded
  • 30g spring onion, finely chopped
  • 1 tsp milk
  • Parsley (optional, chopped for garnish)

Instructions

  • Prepare the Minced Meat:

    • Heat a little olive oil in a skillet over medium heat.
    • Add the minced meat and cook until browned, breaking it into small pieces as it cooks.
    • Season the meat with salt, black pepper, and paprika to taste.
    • Cook for another 2–3 minutes until well-seasoned. Remove from heat and set aside.
  • Prepare the Egg Mixture:

    • In a bowl, beat the eggs with a pinch of salt and 1 tsp of milk.
    • Add the finely chopped spring onion and mix well.
  • Assemble the Tortillas:

    • Lay the tortillas flat on a clean surface.
    • Brush one side of each tortilla with melted butter.
    • On one half of each tortilla, spread a portion of the cooked minced meat.
    • Sprinkle shredded mozzarella cheese generously over the meat.
    • Fold the tortillas in half to encase the filling.
  • Cook the Tortillas:

    • Heat a bit of olive oil in a large skillet over medium heat.
    • Carefully place the folded tortillas in the skillet.
    • Gently lift the edge of each tortilla and pour a small amount of the egg mixture inside.
    • Cook each tortilla for 2–3 minutes, or until golden and crispy on the bottom.
    • Flip the tortillas and cook the other side until crispy and the cheese is melted.
  • Serve:

    • Remove the tortillas from the skillet and place them on a serving plate.
    • Lightly brush the tops with additional melted butter for added flavor.
    • Garnish with parsley if desired and serve hot.
