Ingredients
- 380 grams of minced meat
- 2 eggs
- Salt, to taste
- Black pepper, to taste
- Paprika, to taste
- Olive oil (for cooking)
- 4 tortillas
- Melted butter (for brushing)
- Mozzarella cheese, shredded
- 30g spring onion, finely chopped
- 1 tsp milk
- Parsley (optional, chopped for garnish)

Prepare the Minced Meat:
- Heat a little olive oil in a skillet over medium heat.
- Add the minced meat and cook until browned, breaking it into small pieces as it cooks.
- Season the meat with salt, black pepper, and paprika to taste.
- Cook for another 2–3 minutes until well-seasoned. Remove from heat and set aside.

Prepare the Egg Mixture:
- In a bowl, beat the eggs with a pinch of salt and 1 tsp of milk.
- Add the finely chopped spring onion and mix well.

Assemble the Tortillas:
- Lay the tortillas flat on a clean surface.
- Brush one side of each tortilla with melted butter.
- On one half of each tortilla, spread a portion of the cooked minced meat.
- Sprinkle shredded mozzarella cheese generously over the meat.
- Fold the tortillas in half to encase the filling.

Cook the Tortillas:
- Heat a bit of olive oil in a large skillet over medium heat.
- Carefully place the folded tortillas in the skillet.
- Gently lift the edge of each tortilla and pour a small amount of the egg mixture inside.
- Cook each tortilla for 2–3 minutes, or until golden and crispy on the bottom.
- Flip the tortillas and cook the other side until crispy and the cheese is melted.

Serve:
- Remove the tortillas from the skillet and place them on a serving plate.
- Lightly brush the tops with additional melted butter for added flavor.
- Garnish with parsley if desired and serve hot.
