Whether you’re baking for an Easter gathering, making treats for kids, or packaging them as sweet gifts, these cookies add a cheerful pop of color to any dessert table.

Ingredients

  • 1 cup (2 sticks) butter, softened
  • ¾ cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • ¼ teaspoon salt
  • ¼ cup sanding sugar (pink, yellow, blue, or green)
  • 1 cup pastel candy-coated chocolates (such as M&M’s)

Instructions

Step 1: Make the Cookie Dough

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg yolks and vanilla extract, mixing until well combined.
  4. Gradually add the flour and salt, stirring until a soft dough forms.

Step 2: Shape and Coat

  1. Roll the dough into teaspoon-sized balls.
  2. Roll each dough ball in sanding sugar to coat the outside.
  3. Place on the prepared baking sheet, spacing cookies about 1 inch apart.

Step 3: Add the Candy Center

  1. Gently press a pastel chocolate candy into the center of each cookie, slightly flattening the dough.

Step 4: Bake and Cool

  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Storage: Store cookies in an airtight container at room temperature for up to 1 week.
  • Make-Ahead: The dough can be prepared and refrigerated for up to 2 days before baking.
  • Customization: Swap pastel candies for chocolate chips, peanut butter cups, or sprinkle-coated centers for a fun twist.
