Ingredients

For the Whoopie Pies:

  • 1 box French vanilla cake mix
  • 1 large egg
  • 1/2 cup unsalted sweet cream butter, softened
  • 3 cups Easter sprinkles

For the Fluffy Vanilla Frosting:

  • 1/2 cup unsalted sweet cream butter, softened
  • 2 1/2 cups powdered sugar
  • 2 tbsp heavy whipping cream
  • 1 tsp pure vanilla extract
  • Pink gel food coloring

Instructions

  1. Prepare the Dough:
    • In a mixing bowl, combine the cake mix, egg, and softened butter. Mix until a soft dough forms.
    • Gently fold in 1 cup of Easter sprinkles.
  2. Shape & Coat:
    • Roll the dough into small balls and coat them in the remaining sprinkles.
    • Place them onto a lined baking sheet, spacing them about 2 inches apart.
  3. Bake to Perfection:
    • Preheat the oven to 350°F.
    • Bake the whoopie pies for 10-12 minutes or until they are set and lightly golden on the edges.
    • Let them cool completely before assembling.
  4. Make the Frosting:
    • In a separate bowl, beat the softened butter until smooth.
    • Add powdered sugar, heavy cream, vanilla extract, and pink gel food coloring. Beat until light and fluffy.
    • Chill the frosting for 10-15 minutes for the best consistency.
  5. Assemble the Whoopie Pies:
    • Pipe or spread frosting onto one whoopie pie.
    • Sandwich with another whoopie pie, pressing gently to secure.
    • Repeat with remaining cookies.
