Instructions

1. Prepare the Zucchini

  • Wash the zucchinis thoroughly and trim off the ends.
  • Grate the zucchinis using a box grater or food processor.
  • Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step ensures your patties hold together and don’t turn soggy.

2. Mix the Ingredients

  • In a large mixing bowl, beat the eggs until smooth.
  • Add the grated zucchini to the eggs and season with salt and pepper to taste.
  • Sprinkle the flour or starch over the zucchini mixture and stir until well combined, ensuring the zucchini is evenly coated.

3. Fry the Patties
