Description

This Easy Cabbage Roll Soup is a hearty one-pot meal, combining all the flavors of traditional cabbage rolls in a warm and comforting bowl. Perfect for busy weeknights or cozy dinners!


Ingredients

  • 1 lb lean ground beef
  • 4 cups low-sodium beef broth
  • 3 (8 oz) cans tomato sauce
  • 2 tsp vegetable oil
  • ½ cup uncooked white rice
  • 4 cups chopped green cabbage
  • 2 medium carrots, sliced
  • 1 medium yellow onion, diced
  • 3 tbsp light brown sugar
  • 2 tbsp chopped fresh parsley
  • 1 bay leaf
  • 1 tsp minced garlic
  • Salt and pepper to taste

Instructions

  1. Brown the Ground Beef
    • Heat vegetable oil in a large soup pot or Dutch oven over medium-high heat.
    • Add ground beef, season with salt and pepper, and cook until browned. Break it into crumbles and drain excess fat if needed.
  2. Sauté Aromatics
    • Stir in diced onion and minced garlic.
    • Cook for 2–3 minutes until the onion becomes soft and translucent.
  3. Combine Ingredients
    • Add chopped cabbage, sliced carrots, tomato sauce, beef broth, white rice, bay leaf, and brown sugar.
    • Stir well to mix all the ingredients evenly.
  4. Simmer the Soup
    • Bring the mixture to a gentle simmer over medium heat.
    • Cover and cook for 25 minutes, stirring occasionally, until the rice is tender and the flavors meld together.
  5. Finish and Serve
    • Remove and discard the bay leaf.
    • Taste and adjust seasoning with additional salt and pepper as needed.
    • Garnish with fresh chopped parsley before serving.

Notes

  • Use lean ground beef (90% lean) for less grease.
  • If short on time, substitute uncooked rice with pre-cooked rice and add it during the last 5 minutes of cooking.
  • Feel free to customize by adding diced celery, green bell peppers, or zucchini.
