Description
This Easy Cabbage Roll Soup is a hearty one-pot meal, combining all the flavors of traditional cabbage rolls in a warm and comforting bowl. Perfect for busy weeknights or cozy dinners!
Ingredients
- 1 lb lean ground beef
- 4 cups low-sodium beef broth
- 3 (8 oz) cans tomato sauce
- 2 tsp vegetable oil
- ½ cup uncooked white rice
- 4 cups chopped green cabbage
- 2 medium carrots, sliced
- 1 medium yellow onion, diced
- 3 tbsp light brown sugar
- 2 tbsp chopped fresh parsley
- 1 bay leaf
- 1 tsp minced garlic
- Salt and pepper to taste
Instructions
- Brown the Ground Beef
- Heat vegetable oil in a large soup pot or Dutch oven over medium-high heat.
- Add ground beef, season with salt and pepper, and cook until browned. Break it into crumbles and drain excess fat if needed.
- Sauté Aromatics
- Stir in diced onion and minced garlic.
- Cook for 2–3 minutes until the onion becomes soft and translucent.
- Combine Ingredients
- Add chopped cabbage, sliced carrots, tomato sauce, beef broth, white rice, bay leaf, and brown sugar.
- Stir well to mix all the ingredients evenly.
- Simmer the Soup
- Bring the mixture to a gentle simmer over medium heat.
- Cover and cook for 25 minutes, stirring occasionally, until the rice is tender and the flavors meld together.
- Finish and Serve
- Remove and discard the bay leaf.
- Taste and adjust seasoning with additional salt and pepper as needed.
- Garnish with fresh chopped parsley before serving.
Notes
- Use lean ground beef (90% lean) for less grease.
- If short on time, substitute uncooked rice with pre-cooked rice and add it during the last 5 minutes of cooking.
- Feel free to customize by adding diced celery, green bell peppers, or zucchini.
