Description

A delicious and healthy snack featuring toasted baguette slices topped with cottage cheese, basil pesto, and cherry tomatoes.


Ingredients

  • 1 French baguette, sliced into 1/2-inch rounds (about 12 slices)
  • 1 cup cottage cheese
  • 1/2 cup basil pesto
  • 1/4 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet. Brush one side of each slice with olive oil.
  3. Bake the baguette slices in the preheated oven for about 5-7 minutes, or until they are lightly golden and crisp.
  4. In a medium bowl, mix the cottage cheese with salt and pepper to taste.
  5. Spread a generous layer of the cottage cheese mixture on the toasted side of each crostini.
  6. Top each crostini with a spoonful of basil pesto and a few cherry tomato halves.
  7. Garnish with fresh basil leaves if desired.
  8. Serve immediately or chill for up to 30 minutes before serving for a refreshing snack.

Notes

  • For added crunch, sprinkle some toasted pine nuts or walnuts on top of the crostini before serving.
