A delicious and healthy snack featuring toasted baguette slices topped with cottage cheese, basil pesto, and cherry tomatoes.
Ingredients
- 1 French baguette, sliced into 1/2-inch rounds (about 12 slices)
- 1 cup cottage cheese
- 1/2 cup basil pesto
- 1/4 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet. Brush one side of each slice with olive oil.
- Bake the baguette slices in the preheated oven for about 5-7 minutes, or until they are lightly golden and crisp.
- In a medium bowl, mix the cottage cheese with salt and pepper to taste.
- Spread a generous layer of the cottage cheese mixture on the toasted side of each crostini.
- Top each crostini with a spoonful of basil pesto and a few cherry tomato halves.
- Garnish with fresh basil leaves if desired.
- Serve immediately or chill for up to 30 minutes before serving for a refreshing snack.
Notes
- For added crunch, sprinkle some toasted pine nuts or walnuts on top of the crostini before serving.
- Substitute the basil pesto with sun-dried tomato pesto for a different flavor profile.
