Ingredients

  • 1 lb (450 g) baby potatoes, washed and halved
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions

  • Prepare the Potatoes:
    • Wash and halve the baby potatoes. Pat them dry with a kitchen towel to help them crisp up when sautéed.
  • Sauté the Potatoes:
    • Heat olive oil in a large skillet over medium heat.
    • Place the potatoes cut side down in the skillet and cook for 5-7 minutes or until golden brown.
    • Flip the potatoes and cook for another 5 minutes or until fork-tender. Remove them from the skillet and set aside.
  • Make the Garlic Sauce:
    • In the same skillet, melt the butter over medium-low heat.
    • Add the minced garlic and sauté for 1-2 minutes until fragrant, taking care not to burn it.
  • Add Cream and Cheese:
    • Pour the heavy cream into the skillet and stir to combine.
    • Stir in the grated Parmesan cheese and let it melt into the sauce, stirring until smooth.
    • Season the sauce with salt and pepper to taste.
  • Combine Potatoes and Sauce:
    • Return the sautéed potatoes to the skillet.
    • Toss gently to coat the potatoes evenly in the creamy garlic sauce.
  • Garnish and Serve:
    • Sprinkle with freshly chopped parsley for a burst of freshness.
