Ingredients
- 1 lb (450 g) baby potatoes, washed and halved
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 cloves garlic, minced
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Instructions
- Prepare the Potatoes:
- Wash and halve the baby potatoes. Pat them dry with a kitchen towel to help them crisp up when sautéed.
- Sauté the Potatoes:
- Heat olive oil in a large skillet over medium heat.
- Place the potatoes cut side down in the skillet and cook for 5-7 minutes or until golden brown.
- Flip the potatoes and cook for another 5 minutes or until fork-tender. Remove them from the skillet and set aside.
- Make the Garlic Sauce:
- In the same skillet, melt the butter over medium-low heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant, taking care not to burn it.
- Add Cream and Cheese:
- Pour the heavy cream into the skillet and stir to combine.
- Stir in the grated Parmesan cheese and let it melt into the sauce, stirring until smooth.
- Season the sauce with salt and pepper to taste.
- Combine Potatoes and Sauce:
- Return the sautéed potatoes to the skillet.
- Toss gently to coat the potatoes evenly in the creamy garlic sauce.
- Garnish and Serve:
- Sprinkle with freshly chopped parsley for a burst of freshness.
