- 1 kg of potatoes
- 2 eggs
- 1 onion, finely chopped
- 1 pepper, finely chopped
- 80 grams of cheese, grated
- Salt, to taste
- Black pepper, to taste
- Paprika, to taste
- Oregano, to taste
- Olive oil, as needed
Instructions
- Preheat the Oven: Preheat your oven to 180°C (356°F). Grease a baking dish with olive oil to prevent sticking and enhance flavor.
- Prepare the Potatoes: Peel and grate the potatoes using a box grater. Place the grated potatoes in a large mixing bowl. Using a clean kitchen towel or cheesecloth, squeeze out any excess moisture from the grated potatoes to avoid sogginess.
- Mix the Ingredients: Add the finely chopped onion and pepper to the grated potatoes. Mix thoroughly. In a separate bowl, beat the eggs and then pour them into the potato mixture, stirring until evenly combined. Add the grated cheese, salt, black pepper, paprika, and oregano to the bowl. Mix well to combine all ingredients.
- Assemble the Bake: Transfer the potato mixture to the prepared baking dish. Spread it out evenly to ensure uniform cooking. Drizzle a small amount of olive oil over the top to help it brown beautifully.
