A delightful and easy-to-make lemon trifle that layers creamy lemon pudding, ladyfinger cookies, whipped cream, and fresh berries.
Ingredients
- 2 cups lemon pudding mix
- 4 cups milk
- 1 teaspoon vanilla extract
- 1 (14-ounce) package of ladyfinger cookies
- 2 cups whipped cream (store-bought or homemade)
- 2 cups fresh berries (strawberries, blueberries, or raspberries)
- Zest of 1 lemon
Instructions
- In a large mixing bowl, whisk together the lemon pudding mix, milk, and vanilla extract until smooth and thickened, about 2 minutes. Set aside.
- In a trifle dish or large glass bowl, layer half of the ladyfinger cookies at the bottom.
- Pour half of the lemon pudding mixture over the cookies, spreading it evenly.
- Add half of the whipped cream on top of the pudding layer, smoothing it out gently.
- Sprinkle half of the fresh berries over the whipped cream.
- Repeat the layering process with the remaining ladyfinger cookies, lemon pudding, whipped cream, and berries.
- Finish with a sprinkle of lemon zest on top for garnish.
- Cover with plastic wrap and refrigerate for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a richer flavor, consider adding a splash of limoncello liqueur to the pudding mixture.
