Ingredients

  • 2 cups lemon pudding mix
  • 4 cups milk
  • 1 teaspoon vanilla extract
  • 1 (14-ounce) package of ladyfinger cookies
  • 2 cups whipped cream (store-bought or homemade)
  • 2 cups fresh berries (strawberries, blueberries, or raspberries)
  • Zest of 1 lemon

Instructions

  1. In a large mixing bowl, whisk together the lemon pudding mix, milk, and vanilla extract until smooth and thickened, about 2 minutes. Set aside.
  2. In a trifle dish or large glass bowl, layer half of the ladyfinger cookies at the bottom.
  3. Pour half of the lemon pudding mixture over the cookies, spreading it evenly.
  4. Add half of the whipped cream on top of the pudding layer, smoothing it out gently.
  5. Sprinkle half of the fresh berries over the whipped cream.
  6. Repeat the layering process with the remaining ladyfinger cookies, lemon pudding, whipped cream, and berries.
  7. Finish with a sprinkle of lemon zest on top for garnish.
  8. Cover with plastic wrap and refrigerate for at least 2 hours before serving to allow the flavors to meld.
