Description

A refreshing and flavorful Easy Mexican Street Corn Pasta Salad that combines the sweetness of corn with the creaminess of dressing and the zest of lime.


Ingredients

  • 8 ounces rotini pasta
  • 1 can (15 ounces) sweet corn, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta, sweet corn, cherry tomatoes, red onion, cilantro, and feta cheese.
  3. In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature.
