Easy Pecan Pie Bars are a simplified, portable version of the classic pecan pie, featuring a buttery shortbread crust and a rich, gooey pecan filling. Perfect for holidays, potlucks, or anytime you’re craving a sweet treat.
Ingredients
For the Shortbread Crust:
- Butter – 6 tablespoons (softened)
- All-purpose flour – 1 cup
- Granulated sugar – 1/4 cup
For the Pecan Pie Filling:
- Pecans (whole or chopped) – 2 cups
- Butter (melted) – 1/4 cup
- Eggs (room temperature) – 2 large
- Vanilla extract – 1 teaspoon
- Brown sugar (packed) – 1 cup
- Dark corn syrup – 1/2 cup
- Salt – 1/2 teaspoon
Instructions
- Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a 9×9” baking dish with parchment paper, leaving overhangs for easy removal.
- In a medium bowl, mix softened butter, flour, and granulated sugar until the mixture becomes crumbly. If needed, add 1 tablespoon of water to help it hold together.
- Press the crust mixture firmly into the bottom of the prepared dish.
- Bake the crust for 10–12 minutes or until slightly puffed and dry. Let it cool slightly while preparing the filling.
- Make the Filling:
- In a medium bowl, whisk together brown sugar, dark corn syrup, melted butter, eggs, vanilla extract, and salt until smooth.
- Fold in the pecans, ensuring they’re evenly coated in the filling mixture.
- Assemble and Bake:
- Pour the filling evenly over the baked crust.
- Bake for 20–25 minutes, or until the filling is set with a slight jiggle in the center. The filling will firm up as it cools.
- Cool and Slice:
- Let the bars cool at room temperature, then refrigerate for at least 2 hours for cleaner slicing.
- Slice into squares using a sharp knife, wiping the blade between cuts for clean edges.
Notes
- Store bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 7 days.
- Freeze individual bars wrapped in plastic and stored in a freezer-safe bag for up to 3 months. Thaw overnight in the fridge before serving.
