Ingredients

For the Shortbread Crust:

  • Butter – 6 tablespoons (softened)
  • All-purpose flour – 1 cup
  • Granulated sugar – 1/4 cup

For the Pecan Pie Filling:

  • Pecans (whole or chopped) – 2 cups
  • Butter (melted) – 1/4 cup
  • Eggs (room temperature) – 2 large
  • Vanilla extract – 1 teaspoon
  • Brown sugar (packed) – 1 cup
  • Dark corn syrup – 1/2 cup
  • Salt – 1/2 teaspoon

Instructions

  1. Prepare the Crust:
    • Preheat oven to 350°F (175°C). Line a 9×9” baking dish with parchment paper, leaving overhangs for easy removal.
    • In a medium bowl, mix softened butter, flour, and granulated sugar until the mixture becomes crumbly. If needed, add 1 tablespoon of water to help it hold together.
    • Press the crust mixture firmly into the bottom of the prepared dish.
    • Bake the crust for 10–12 minutes or until slightly puffed and dry. Let it cool slightly while preparing the filling.
  2. Make the Filling:
    • In a medium bowl, whisk together brown sugar, dark corn syrup, melted butter, eggs, vanilla extract, and salt until smooth.
    • Fold in the pecans, ensuring they’re evenly coated in the filling mixture.
  3. Assemble and Bake:
    • Pour the filling evenly over the baked crust.
    • Bake for 20–25 minutes, or until the filling is set with a slight jiggle in the center. The filling will firm up as it cools.
  4. Cool and Slice:
    • Let the bars cool at room temperature, then refrigerate for at least 2 hours for cleaner slicing.
    • Slice into squares using a sharp knife, wiping the blade between cuts for clean edges.

Notes

  • Store bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 7 days.
  • Freeze individual bars wrapped in plastic and stored in a freezer-safe bag for up to 3 months. Thaw overnight in the fridge before serving.
