Ingredients
- 1 eggplant
- 3 cloves of garlic (or to taste), minced
- Vegetable oil for frying
- Salt to taste
- 2 tomatoes, sliced
- 3–4 eggs, beaten
- 2 tablespoons mayonnaise
- Salt and pepper to taste
- Parmesan cheese, grated (optional, for garnish)
Instructions
1. Prepare the Eggplant:
- Wash the eggplant and slice it into rounds about 1/4 inch thick.
- Sprinkle the slices with salt and let them sit for about 10 minutes to draw out moisture and reduce bitterness.
- Blot the slices with a paper towel to remove excess water.
2. Fry the Eggplant:
- Heat a large skillet over medium heat with enough vegetable oil to coat the bottom of the pan.
- Fry the eggplant slices until golden brown on both sides, about 3-4 minutes per side.
- Place the fried slices on a plate lined with paper towels to drain any excess oil.
3. Prepare the Toppings:
- In a small bowl, combine minced garlic and mayonnaise. Adjust the garlic quantity to suit your taste.
- Beat the eggs in a separate bowl and season with salt and pepper.
- In another skillet, scramble the eggs over medium heat until cooked through but still soft.
4. Assemble the Appetizer:
- Spread a thin layer of garlic mayonnaise over each fried eggplant slice.
- Add a slice of tomato on top of the mayonnaise layer.
- Spoon scrambled eggs over the tomato slices.
5. Garnish and Serve:
- Optionally, sprinkle grated Parmesan cheese on top of the assembled appetizers for added flavor.
- Serve warm or at room temperature. Garnish with fresh herbs like parsley or basil for extra freshness.
Notes
- Oil-Free Option: For a healthier version, bake the eggplant slices at 400°F (200°C) for 15-20 minutes, flipping halfway through.
- Flavor Boost: Add a pinch of red chili flakes or drizzle hot sauce on the garlic mayonnaise for a spicy kick.
- Customizable: Substitute tomatoes with roasted red peppers or top with fresh mozzarella slices for a new twist.
