Ingredients

  • 4 whole English muffins, split in half
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1/2 cup cooked and crumbled breakfast sausage or bacon
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup sliced black olives (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Place the split English muffins on a baking sheet, cut side up.
  3. Spread about 2 tablespoons of pizza sauce on each muffin half.
  4. Sprinkle shredded mozzarella cheese evenly over the sauce on each muffin.
  5. In a skillet, cook the eggs sunny-side up or scrambled, seasoning with salt and pepper to taste.
