Ingredients
- 4 whole English muffins, split in half
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 4 large eggs
- 1/2 cup cooked and crumbled breakfast sausage or bacon
- 1/2 cup diced bell peppers (any color)
- 1/4 cup sliced black olives (optional)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F.
- Place the split English muffins on a baking sheet, cut side up.
- Spread about 2 tablespoons of pizza sauce on each muffin half.
- Sprinkle shredded mozzarella cheese evenly over the sauce on each muffin.
- In a skillet, cook the eggs sunny-side up or scrambled, seasoning with salt and pepper to taste.
- Distribute the cooked sausage or bacon, diced bell peppers, and black olives evenly over the cheese on each muffin.
- Carefully place a cooked egg on top of each muffin half.
- Sprinkle Italian seasoning over the top of each muffin.
- Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh basil or parsley if desired. Serve hot.
