Ingredients

  • 1 cup unsalted butter (2 sticks)
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon espresso powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • For the Coffee Buttercream:
  • 1 cup unsalted butter (2 sticks), softened
  • 4 cups powdered sugar
  • 1/4 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the granulated sugar until well combined. Allow to cool slightly, then whisk in the eggs one at a time, followed by the vanilla extract.
  3. In a separate bowl, sift together the flour, cocoa powder, espresso powder, salt, and baking powder. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  4. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the cupcakes to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
  5. While the cupcakes are cooling, prepare the coffee buttercream. In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on low speed until combined. Add the brewed coffee, vanilla extract, and espresso powder, then beat on high speed until the frosting is light and fluffy.
  6. Once the cupcakes are completely cool, frost them generously with the coffee buttercream using a piping bag or a spatula.
