Description

A rich and creamy espresso cheesecake with a graham cracker crust, perfect for coffee lovers.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 1/2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup brewed espresso, cooled
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with 1 cup sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract, sour cream, brewed espresso, and flour until fully combined.
  5. Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula.
  6. Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  7. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, before serving.
  9. Slice and serve chilled.
