Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups potatoes, diced
- 2 cups carrots, diced
- 1 cup celery, diced
- 1 cup corn kernels (fresh or frozen)
- 1 can (14.5 oz) diced tomatoes with juice
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tbsp olive oil
Instructions
1. Preheat the Oven
- Set the oven to 375°F (190°C).
2. Brown the Ground Beef
- Heat olive oil in a skillet over medium heat.
- Add ground beef and cook until browned (about 5 minutes).
- Remove beef with a slotted spoon and set aside.
3. Sauté the Aromatics
- In the same skillet, add chopped onion and minced garlic.
- Cook for 3-4 minutes until soft and fragrant.
4. Cook the Vegetables
- Stir in diced potatoes, carrots, and celery.
- Cook for about 5 minutes, stirring occasionally.
5. Combine Ingredients
- Add the corn, cooked beef, diced tomatoes (with juice), and beef broth.
- Season with salt, pepper, thyme, and rosemary.
6. Transfer to a Baking Dish
- Grease a 9×13-inch baking dish with olive oil.
- Spread the beef and veggie mixture evenly in the dish.
7. Bake Covered
- Cover with aluminum foil and bake for 30 minutes.
8. Add Cheese & Finish Baking
- Remove foil and sprinkle shredded cheddar on top.
- Bake uncovered for 10-15 more minutes until the cheese is bubbly and golden.
9. Rest & Serve
- Let the bake rest for 5 minutes before serving.
