Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups potatoes, diced
  • 2 cups carrots, diced
  • 1 cup celery, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp olive oil

Instructions

1. Preheat the Oven

  • Set the oven to 375°F (190°C).

2. Brown the Ground Beef

  • Heat olive oil in a skillet over medium heat.
  • Add ground beef and cook until browned (about 5 minutes).
  • Remove beef with a slotted spoon and set aside.

3. Sauté the Aromatics

  • In the same skillet, add chopped onion and minced garlic.
  • Cook for 3-4 minutes until soft and fragrant.

4. Cook the Vegetables

  • Stir in diced potatoes, carrots, and celery.
  • Cook for about 5 minutes, stirring occasionally.

5. Combine Ingredients

  • Add the corn, cooked beef, diced tomatoes (with juice), and beef broth.
  • Season with salt, pepper, thyme, and rosemary.

6. Transfer to a Baking Dish

  • Grease a 9×13-inch baking dish with olive oil.
  • Spread the beef and veggie mixture evenly in the dish.

7. Bake Covered

  • Cover with aluminum foil and bake for 30 minutes.

8. Add Cheese & Finish Baking

  • Remove foil and sprinkle shredded cheddar on top.
  • Bake uncovered for 10-15 more minutes until the cheese is bubbly and golden.

9. Rest & Serve

  • Let the bake rest for 5 minutes before serving.
  • Enjoy warm with crusty bread or a side salad!
