Ingredients
Base Layers:
- 6 ounces red gelatin (strawberry or raspberry flavor)
- 1 cup boiling water
- 1 cup cold water
- 1 large sponge cake, cubed (store-bought or homemade)
- ½ cup cranberry juice (or sweet sherry for an alcoholic version)
Pudding Layer:
- 6.8 ounces vanilla or white chocolate instant pudding mix (two 3.4-ounce packages)
- 4 cups cold whole milk
- ¼ cup powdered sugar
Berry and Jam Layers:
- 2 cups fresh strawberries (washed, hulled, and sliced)
- 2 cups fresh raspberries
- 16 ounces raspberry jam or preserves
Whipped Cream Layer:
- 2 cups heavy cream
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
Garnish:
- A few fresh mint leaves
Instructions
1. Prepare the Gelatin
- Dissolve the gelatin in boiling water, stirring until fully dissolved.
- Add the cold water and mix well.
- Pour the mixture into a shallow dish and refrigerate for about two hours, or until it sets completely.
2. Assemble the Cake Layer
- Spread the cubed sponge cake evenly at the bottom of a large trifle dish.
- Drizzle the cranberry juice or sweet sherry over the cake, allowing it to absorb the moisture.
3. Add the Jam and Berries
- Spread half of the raspberry jam over the sponge cake.
- Sprinkle half of the strawberries and raspberries on top, making sure to distribute them evenly.
4. Prepare the Pudding Layer
- In a mixing bowl, whisk together the pudding mix, cold milk, and powdered sugar until smooth.
- Let the mixture thicken for about five minutes.
- Spread half of the pudding over the berry layer.
5. Layer the Gelatin
- Cut the prepared gelatin into cubes and layer half of it over the pudding.
6. Repeat the Layers
- Add another layer of sponge cake, drizzle with juice or sherry, and repeat the layers of jam, berries, pudding, and gelatin.
7. Make the Whipped Cream
- In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Spread or pipe the whipped cream evenly over the top.
8. Garnish and Chill
- Decorate the trifle with remaining berries and fresh mint leaves.
- Refrigerate for at least four hours or overnight to let the flavors meld together.
9. Serve and Enjoy
- Use a large spoon to scoop out portions, revealing the beautiful layers.
