Ingredients

- 2 chicken breasts, seasoned with 1 teaspoon spice mix
- ½ pound shrimp, seasoned with 1 teaspoon spice mix
- 4 medium hot dogs or sausages (like chicken hotdogs), sliced
Vegetables:
- 1 small onion, chopped
- 3 garlic cloves, minced
- 4 tomatoes, chopped
- 1 hot chili pepper, chopped
- 1 small red bell pepper, chopped
- 110 g tomato paste
- 5 spring onions, chopped
Additional Ingredients:
- 3 ½ cups raw long-grain rice
- 2 cups chicken stock
- 2 cups water
- 1 teaspoon salt
- ½ teaspoon thyme
- 1 tablespoon spice mix
- 1 chicken seasoning cube
Instructions
1. Prepare the Spice Mix
- Mix the onion powder, garlic powder, salt, paprika, and cayenne pepper in a small bowl. Set it aside.
2. Season the Meats
- Rub 1 teaspoon of the spice mix on the chicken breasts.
- Season the shrimp with 1 teaspoon of the spice mix as well. Set both aside.
3. Cook the Meats
- Heat a drizzle of oil in a large pot or Dutch oven over medium-high heat.
- Cook the chicken breasts for 5-7 minutes per side until browned and fully cooked. Remove and set aside.
- Add shrimp to the pot and cook for 2-3 minutes until pink and opaque. Remove and set aside.
- Cook the sliced sausages or hot dogs until browned.
4. Sauté the Vegetables
- Add more oil to the pot if needed.

5. Add Tomatoes and Tomato Paste
- Stir in the chopped tomatoes and tomato paste.

6. Add Rice and Seasonings
- Stir the uncooked rice into the pot to coat it in the tomato mixture.
- Add chicken stock, water, remaining spice mix, salt, thyme, and the chicken seasoning cube. Stir well and bring to a boil.
7. Cook the Rice
- Reduce heat to low, cover the pot, and let the mixture simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
8. Combine Everything
- Gently fold in the cooked chicken, shrimp, and sausages.
- Add the chopped spring onions and stir to combine.

- Garnish with extra spring onions and serve hot.
