Description

Light, airy, and incredibly soft, Fluffy Cottage Cheese Cloud Bread is the perfect low-carb, high-protein alternative to traditional bread. Made with simple ingredients like eggs and cottage cheese, this gluten-free and keto-friendly bread is ideal for sandwiches, mini pizzas, or as a snack with your favorite toppings. Whether you’re cutting carbs or just looking for a unique bread substitute, this recipe is easy to make and full of possibilities!

Ingredients

  • 3 large eggs, separated
  • ½ cup cottage cheese, blended until smooth
  • ¼ teaspoon cream of tartar
  • ¼ teaspoon salt
  • 1 teaspoon cornstarch or arrowroot powder (optional, for structure)
  • 1 teaspoon honey or sweetener (optional, for a touch of sweetness)

Instructions

  1. Preheat & Prep – Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Whip the Egg Whites – In a clean bowl, beat egg whites with cream of tartar until stiff peaks form.
  3. Mix the Yolks – In a separate bowl, mix cottage cheese, egg yolks, salt, cornstarch (if using), and honey or sweetener (if using). Stir until smooth.
  4. Gently Fold – Carefully fold the whipped egg whites into the yolk mixture, a little at a time, until fully combined. Be gentle to keep the mixture fluffy.
  5. Shape & Bake – Spoon the mixture onto the prepared baking sheet, forming 6-8 small rounds. Bake for 25-30 minutes or until golden brown.
  6. Cool & Enjoy – Let the cloud bread cool completely before serving.

Notes

  • For a savory twist, add garlic powder, dried herbs, or shredded cheese.
  • If making a sweeter version, try adding a pinch of cinnamon and vanilla extract.
  • Store in an airtight container in the fridge for up to 3 days or freeze for up to a month.
