Description
A delightful French Chicken Casserole a la Normande featuring tender chicken breasts in a creamy sauce with mushrooms and Gruyère cheese.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup dry white wine
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup grated Gruyère cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.
- Season the chicken breasts with salt and pepper. Push the vegetables to the side of the skillet and add the chicken breasts, browning them on both sides for about 3-4 minutes per side.
- Pour in the white wine and chicken broth, bringing the mixture to a simmer.
- Stir in the heavy cream and dried thyme, then let it simmer for another 5 minutes.
- Transfer the chicken and sauce mixture to a greased 9×13-inch baking dish. Sprinkle the grated Gruyère cheese evenly over the top.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole cool for 5 minutes before garnishing with fresh parsley and serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Add a cup of frozen peas or spinach for extra vegetables and color.
