Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup grated Gruyère cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Add the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.
  4. Season the chicken breasts with salt and pepper. Push the vegetables to the side of the skillet and add the chicken breasts, browning them on both sides for about 3-4 minutes per side.
  5. Pour in the white wine and chicken broth, bringing the mixture to a simmer.
  6. Stir in the heavy cream and dried thyme, then let it simmer for another 5 minutes.
  7. Transfer the chicken and sauce mixture to a greased 9×13-inch baking dish. Sprinkle the grated Gruyère cheese evenly over the top.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  10. Let the casserole cool for 5 minutes before garnishing with fresh parsley and serving.

  • For a lighter version, substitute half-and-half for heavy cream.
