Description

This French Onion Meatloaf combines juicy beef, caramelized onions, and gooey Gruyère cheese for a delicious twist on a comfort food classic. Perfect for weeknight dinners or family gatherings!

Ingredients

  • 1 lb ground beef (mix of lean and fatty for flavor)
  • 2 medium onions, sliced (for caramelized onions)
  • 2 tablespoons butter (to caramelize onions)
  • ½ cup beef broth (adds moisture)
  • 1 cup breadcrumbs (plain or Italian)
  • 1 large egg (to bind the mixture)
  • 1 packet French onion soup mix (for bold flavor)
  • 1 cup shredded Gruyère or Swiss cheese (half for topping, half for filling)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Preheat Your Oven

    • Preheat your oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment paper.
  2. Caramelize the Onions

    • Heat butter in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 15–20 minutes).
    • Remove from heat and set aside, reserving a small portion for topping.
  3. Mix the Meatloaf Ingredients

    • In a large bowl, combine ground beef, caramelized onions (except reserved portion), breadcrumbs, beef broth, egg, and French onion soup mix.
    • Mix gently with your hands until just combined—avoid overmixing to keep the meatloaf tender.
  4. Shape the Meatloaf

    • Shape the mixture into a loaf and place it in the prepared pan.
    • Create a shallow well in the center of the loaf for the cheese filling.
  5. Add Cheese and Toppings

    • Sprinkle half of the shredded Gruyère cheese into the well.
    • Top the loaf with the remaining cheese and reserved caramelized onions.
  6. Bake the Meatloaf

    • Bake for 1 hour, or until the internal temperature reaches 160°F (70°C).
  7. Rest and Serve

    • Let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute for a juicy, flavorful result.
    • Garnish with fresh parsley and serve warm.

Notes

  • Use fresh onions and take your time caramelizing them for maximum flavor.
  • Add a splash of Worcestershire sauce for an extra depth of flavor.
